Sweet Waffles with Chocolate Mousse

  • 2 1/2 tsp dry yeast
  • 1/2 cup warm water
  • 2 cups warm almond milk
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 2 tsp sugar
  • 1/2 cup melted vegan butter or margarine
  • 1 ⅔ cups chapatti flour sifted (can be found at davis trading or local indian shop)
  • 6 tbsp aquafaba
  • 1/4 tsp baking soda
  • 3 Ingredients Chocolate Mousse
  • 1 cup /240 ml aquafaba
  • 140 g dark vegan chocolate
  • Heaped 1 Tbsp white icing sugar


  1. Mix in a large bowl warm water and yeast. Allow to rest in a warm place 8-10 minutes
  2. whisk in the rest of the wet ingredients except for the aquafaba. After whisking the flour, sugar and salt you will have a very runny batter. Cover and leave in a warm place for 1 hour.
  3. If you are letting it rise over night then place it in the fridge after it has risen for one hour. If you are making waffles the same day then leave the batter out.
  4. The next day remove the batter from the fridge and allow to come to room temperature for about an hour. Whisk the aquafaba until fluffy (about 3-4 minutes) and stir it gently into the batter. Sift the baking soda over the top of the batter and mix gently but thoroughly.
  5. Cook according to your waffle iron instructions.

  7. Whip aquafaba with icing sugar till thick peaks form, meanwhile melt chocolate in a big bowl.
  8. Using a spatula bit by bit mix in aquafaba into the melted chocolate.
