Barbara’s Savoury Mince

Ingredients

    STEP ONE
  • 1 cup soy TVP
  • 1/2 cup boiling water
  • 1 large onion chopped medium
  • 1 large carrot small dice
  • 1 large stalk of celery chopped small dice
  • 1/3 cup oil
  • STEP TWO
  • 2 tsp vecon vege stock paste or marmite
  • 2 Tbsp keecap manis (sweet soy sauce)
  • 2 Tbsp tomato paste
  • 2 tsps dried mixed herbs
  • 1 tsp freshly groung black pepper

Instructions

    STEP ONE
  1. Mix together first 2 ingredients and stand until it’s needed
  2. Next saute remain ingredients for about 5 minutes. Add the soaked TVP and fry a further 5 minutes stirring often.
  3. STEP TWO
  4. Stir ingredients into the frying mixture and cook for a couple of minutes to get it all coated and flavoursome
  5. Add 3 cups of hot water and stir well.
  6. Add 1 cup frozen peas and 1/2 tin whole kernel corn (or 3/4 cup frozen corn kernels)
  7. Bring back to the boil
  8. Simmer for 20 minutes then thicken with a paste of
  9. 1/2 cup cornflour and enough water to mix it with
  10. Cook a further 2 minutes to cook the flour
  11. When cool, put half a cup of mixture into blobs on cling film and twist and freeze
